Lactic fermentation is an age-old preservation tradition: it’s what gives the distinctive gherkins with their spiky surface their typical flavour. In this process, a little of the healthy salty brine also finds its way into the marinade. This composition is rounded off with onion, horseradish, garlic and mustard seeds, as well as pepper and dill.
