Gherkins

Pickled gherkins enjoy a great tradition here in Burgenland: especially around Lake Neusiedl, cucumber plants feel very much at home. Crucial for optimal growing conditions are the night temperatures, which in this area are below 20 degrees. During the harvest season of July and August, the picking is still done by hand and for the most part without any mechanical aids. A particularly challenging job, especially when it is humid and warm. For me, however, it is the highlight of the season!

The pleasant spiciness of the chilli pepper is combined with the seasoning of crunchy Piccolo gherkins in a flavourful vinegar-onion marinade. An ideal accompaniment to spreads or stews: let yourself be surprised by the spicy kick in the finish!

They are tender and delicate in both appearance and taste and are harvested shortly after flowering in the fields of northern Burgenland: Our Gürkchen! As complementary condiments, dill and tarragon form an aromatic contrast to onion and paprika, while peppercorns underline the fiery spiciness of the fresh gherkins in the jar.

The smallest will be the greatest! This is entirely true for the taste of the Piccolo gherkins. They too are prepared according to the original recipe from the 1970s. However, only small pickles measuring less than 6 centimetres make it into the jar. A first-class selection!

Lactic fermentation is an age-old preservation tradition: it’s what gives the distinctive gherkins with their spiky surface their typical flavour. In this process, a little of the healthy salty brine also finds its way into the marinade. This composition is rounded off with onion, horseradish, garlic and mustard seeds, as well as pepper and dill.

Mustard Gherkins, sweet-and-sour
Mustard gherkins are a special variety that grow up to 30 centimetres tall and are harvested comparatively rarely. The marinade infuses it with a sour-sweet flavour: the mildly nutty mustard seeds, with their inherent pungent aroma, contrast with the delicately sweet dill. This is joined by the spiciness of the paprika strips and the distinctively tangy tarragon.
